It’s peach season! Most of us around here get big ol’ boxes of giant, juicy, sweet peaches from the orchards during this time of year. We had a whole bunch in the kitchen at The Ranch this weekend and some of them needed to be used before they got too ripe.
So I got in touch with my “foodie” mind and came up with this delicious and super easy recipe! All you need is some ripe peaches, plain greek yogurt, honey, cinnamon, vanilla, and almonds. I forgot to include almonds in this picture, but they are an important part!
Roasted Peaches with Honey Vanilla Yogurt and Toasted Almonds
- Ripe peaches– one peach per one or two people
- Plain greek yogurt, 1/4 cup per peach half
- Honey, 1/2 cup total should be plenty
- Vanilla, 1/2 tsp per cup of yogurt
- Cinnamon, enough to sprinkle your peaches
- Raw almonds for toasting
- A couple pinches of sea salt
To start off, preheat your oven to 425* F and cut your peaches in half and take the pit out. You’ll want one peach per one or two people, depending on the appetites of who you’re feeding. Place the peach halves skin-side down on a baking sheet and drizzle a little bit of honey over each peach. Then sprinkle on some cinnamon… I added a pinch of sea salt to balance the sweetness, but it’s not totally necessary. Put them in the oven to roast for about 25 minutes.
It’s a perfect time to sweeten up your plain yogurt while the peaches are in the oven. I used this yogurt and added about 2 tablespoons of honey and 1/2 teaspoon of vanilla per 1 cup (8oz.) of yogurt. Mix the honey and vanilla into the yogurt until it is all one smooth color. Start off with those measurements and then add more if it doesn’t taste sweet enough for you. Have enough yogurt on hand to put about 1/4 cup on each peach half.
You will probably also have time to chop and toast the almonds while the peaches are roasting! I chopped about 1/2 cup of raw almonds and it was more than plenty to top six peach halves. Just use your judgement when measuring your almonds, depending on how many peaches you are roasting. Using a sharp knife, coarsely chop the almonds… they don’t need to be super small pieces!
Then toast them in a skillet over the stove on medium heat. Wiggle the pan lightly every once in a while to toss the almonds so they get toasted on all sides. Sprinkle on a pinch of sea salt if you’d like! The timing will be different for various stoves and pans, so just toast them until they become fragrant and the flesh becomes golden. The picture above is what they will look like when they are done. They will have a deeper nutty taste and they’ll be crunchier than raw almonds.
At this point, your peaches should be just about done roasting! The tops get a little bit caramelized, the peaches are softer, and some of the juices run onto the pan.
Now it’s time to put all this deliciousness together into one delectable piece! Place the roasted peach halves on a plate or platter and top each one with a dollop of the sweetened yogurt. Then drizzle honey over the yogurt and sprinkle on the toasted almonds.
