Somewhere in the recesses of my childhood memory, I remember having a treat that was like a s’more and a rice krispie treat together. I must have been young when I had it because I can’t remember where I was or who even made it… I just remember that it was delicious.
As an adult I have looked and looked for that recipe. I didn’t know what it was called, and even Google couldn’t seem to find anything that matched my description. Imagine my surprise when I was putting one of my favorite cook books away just last night and as I turned it over I saw that it was open to a page with the recipe for something called, “Indoor S’mores”. The recipe I’d been looking for had been here the whole time! (I feel like I should be wearing ruby slippers or something…)
Anyway, I couldn’t wait to make them… even knowing I’d have to take all of my kids to the store this morning to get the ingredients didn’t deter me (hardly anything is worth that price!). We made them as soon as we got home…at 10:30am. What.
We changed a couple of things from the recipe to make them more the way I remembered, and they turned out great!! They are so easy and sooo delicious! Just like I remember. I think they would be perfect for a summertime party or to take camping. I’m really glad to have this recipe, and I’m excited to share it with you!
Start by greasing a 9×13 pan… set it aside, then measure 8 cups of Golden Grahams cereal into a large bowl. (I have exactly one giant mixing bowl that is a pain to wash, but it is so much easier to mix stuff in a giant bowl than in a small one that I use it for everything.)
Melt 5 cups of miniature marshmallows, 6 Tablespoons of butter and 1/4 cup of light corn syrup in a pan over low heat, stirring occasionally.
Here’s a tip…spray your measuring cup before you put corn syrup in it and the corn syrup will come out like a dream. Works for measuring honey and other sticky stuff, too!
When it’s almost melted, remove it from the heat and stir until all the lumps are gone. The more slowly you melt this stuff together, the softer it will stay once it’s cooled.
Pour the hot mixture over the cereal and stir it together. Then add 1 1/2 cups of chocolate chips and an additional 1 cup of miniature marshmallows.
Stir until combined, then gently press into the greased 9×13 pan. (I put a little non-stick spray on my fingertips for this job…makes it much less sticky!)
Allow to cool completely, then cut and serve. Yum!

1/4 cup light corn syrup
5 Tablespoons butter
1 tsp vanilla
1 1/2 cups milk chocolate chips
