Brave Girl Camp is going on right now and I’m not there this time. As the years have gone by and my family has grown, it’s just gotten harder and harder for me to be there. BUT I have the best memories of years and years of yummy food there… so when camp is going on I like to make myself some Brave Girl food.
Today I’m making this yummy, yummy salad. When you look at the ingredients list, it’s going to seem like a lot of work to put it together, but it’s really not. It took me about 45 minutes to put together… and I was puttering.
Start by making 1 batch of Maple-Pecan Dressing… just follow the link to get there. If you haven’t bought candied pecans, now is the time to make a quick batch of sugared pecans (they’re super easy….it takes about 5 minutes and just 2 ingredients…sugar and pecans!)
Next chop up the lettuce, chicken and apple and put them in a bowl.
I always use my giant bowl, even if I think it’s going to be way too big for a job. Mixing something in a huge bowl is so much less stressful than trying to make sure nothing falls out!
Then add 1/2 of the recipe of Maple-Pecan Dressing. (That’s all you’ll need…keep the rest in the fridge to use later!)
Last, add the Feta and pecans and give them a quick toss. Serve it immediately. Enjoy!
1 recipe Maple-Pecan Dressing
3 hearts of romaine lettuce, chopped
2 chicken breasts, chopped
1 apple, chopped
8 oz Feta cheese
1 cup sugared/candied pecans
Toss all salad ingredients together in a bowl. Add half of the salad dressing and toss to combine. (Keep the other half of the dressing for another day). Serve immediately.
